Smoked Sausage and Veggie Skillet

Smoked Sausage and Veggie Skillet ‪#‎Recipe‬
Ingredients
2 packs of Beef Smoked Sausage (you can use Turkey or Kielbasa or your choice)
Small Red and Yellow potatoes (I used about 20) quartered
1/2 Large yellow onion chopped
1 pack of mushrooms sliced
1-2 zuccini's cut in small pieces
3 Bell Peppers (I used red, yellow and orange)
5 Thyme sprigs (leaves pulled off the stems)
2 Tablespoons Garlic Powder or 1 Tablespoon fresh minced garlic
2 Tablespoons Olive Oil
Directions:
Chop all veggies in approximately the same size. Season lightly with salt and pepper.
In a large skillet put the 2 tablespoons of olive oil and heat on medium high heat. Drop in the potatoes and allow to sizzle in oil for a minute and then put stove on low and cover the skillet. Cook the potatoes for 20-25 minutes on low stirring, every few minutes until potatoes are tender. Once tender, remove potatoes from pan, draining any oil off and put in a bowl.
Slice the Sausages in 1/4 inch disks. Cook in pan on medium heat until slightly browned. Remove from pan and put in same bowl as the potatoes.
Now cook the onions, bell peppers, zuccini, mushrooms and thyme leaves. After cooking for 5 minutes add the dried or fresh garlic. Cook until tender but do not over cook.
Add the sausages and potatoes back to the pan and mix in with the veggies. Cook for 5 more minutes.
